Sorry Can't Super Busy
These 3 easy meals I throw together when I’m super busy chasing a swell, working, or too tired to cook.
Tasty, healthy, and so easy any roomie, or significant other can easily “surprise” you and whip it up too- espesh if they have- 1.) eaten it and then loved it 2.) actually have witnessed the “easiness” of it .

Chicken Verde-This meal can be as simplistic or as detailed oriented as you make it. The most work you can make for yourself is chopping the sides.. But again you could just throw this into a cabbage cup and call it a night if you really felt like it. We kinda do it up at our house- mainly because Si makes the taco shells and that just always seems like it elevates the whole meal.. It creates a great leftover dish too- you can have the chicken on a salad or create a tortilla soup- or there is always room for more tacos!
Easy Baked Chicken and Right Rice- Okay so the link I provided here is how I do my chicken over and over again. The recipe is paired with a salad- which is also easy af. But honestly you bake the chicken and boil water- pour in the right rice and bam. Done. The rice is so insanely easy and extremely flavorful. Although I know white rice is a main staple for many and can be just as easy in a rice cooker- I find that I really like the varieties that Right Rice has to offer and of course if you are just not feeling like incorporating any veggies - this rice is a blend of over 90% nutritious vegetables… how does that sound?
BOAM Superfood Salad Delight- I love love love a good textured meal. The only prep you need is to bake the sweet potato in advance. Because after that- you're done. Again baking a sweet potato is also easy. The best part is this salad is really filling and packs a punch with so many nutritious essentials. It was a part of my summer salad series- but I could eat this year round FORSURE!
