CHICKEN VERDE TACOS RECIPE
The go to meal in my house is probably the Chicken Verde Tacos. I know most of you have seen it a couple million times on my instagram but I feel like I must share this amazingly easy and delicious recipe to the world. Also it is THE EASIEST DINNER EVER. And fits right into my paleo lifestyle.
I have to admit I am a HUGE fan of any crockpot meal and this is literally the dish that keeps on giving.
On with it…
This recipe makes enough for 4 but if you’re feeding for 2 you’ll def have leftovers - and that’s where the fun part comes in!
Ingredients:
For the Chicken
2 chicken breast
2 thighs (bone in for max flavor)
1 16oz jar of Salsa Verde
Salt & Pepper
For the Fixin’s
A pack of Flour or Corn Tortillas - whichever you prefer,
my latest obsesh are the Cassava Root Grain-free tortillas from Whole Foods..
Tomatoes - cubed
Cabbage.. I shred but also use it as a shell as a sub for the tortilla when I’m cutting corners on carbs
2 avocados - always 2 - the more the merrier
Bushel of cilantro
1 lime
Whatever hot sauce or other delish taco toppings you want to make your chicken verde out of this world good!
recently I made a tacuterie board and had fun with the setting- you can do this for a your next birthday party or a night when you want to have friends over for dinner
Instructions:
Here we go, literally the easiest meal you’ll ever make.
Put your chicken into the crockpot and dump the salsa verde on top, make sure you just dump it, no need to be fancy. Sprinkle of salt and pepper.
Put the crockpot on high for 3 hrs or you can do low on 6 hours ….. annnnnd thats ittt!
Let that baby simmer in all that goodness.
You can totally spice it up with a jalapeño or onion or even a dash of cumin, but srsly you dont really need too.
**In the past I have added cloves of garlic as well & jalapeño.**
Shred or cut your chicken to preference and throw together into your dream taco.
Have left overs?
Make a Tortilla Soup with it, how about a Chicken Verde salad? The possibilities are endless, let your imagination go wild.
Below is a few soup variation of this dish.. which I really love as a left over, on cold nights, or when I have been sick in the past I actually prefer. I also will add extra garlic, sauté kale, cucumber as a topping, shredded carrots, tomato.. any veggie in my fridge. And always lots and lots of cilantro.
