Simple and Quick ( grain-free ) Breakfast Recipes
I have never been one to skip a meal and breakfast has always been a fav- on the real eggs were and still are a major staple in my diet, from my early 20s when I couldn’t afford my organic 2lb papayas - or anything else really.
More often than not, especially when I fly people seemed to be interested in what I eat. With early roll times and living life on the go- I rounded up some simple, quick, and easy recipes, for any babe on a mish.
Papaya Boats ( Strawberry Papaya is optimum ) - ofc this dish is at the top of my list because it is my absolute FAV FAV FAV. You can honestly have this gut healthy fruit any which way and you will FORSURE be happy.
*BONUS* Rich in Vitamin C, papaya is one of the best edibles out there to strengthen the immune system to fight against diseases and infection. Papaya contains more than 200 %of your daily dose of Vitamin C. Apart from this, the fruit is also rich in vitamins A, B, and K which also boost immunity.
My favorite way is with yogurt- I bounce between a dairy free version (coconut bliss) and classic FAGE. Topped with anything from blueberries, banana, granola, honey, starfruit; the combinations are endless. If your really in a rush ( nix the yogurt ) and add a simple squeeze of lemon. 2 fried eggs in coconut oil- it doesn’t get any simpler or anymore filling than this. I mean depending on how hungry you truly are you can have as many eggs as you need. Packed with protein to keep you full, eggs anyway make this OG breakfast classic a winner.
Warm pan at medium heat, drizzle coconut oil, crack 2 egg, stir or swirl around in pan, cover to steam, add salt and pepper to taste- hot sauce or a side of avocado is always an option!!
Waffles- clearly you know this already but I am a mega fan of my paleo waffles by Birch Benders- tasty and easy to take with you or whip up in minutes. I love a good Elvis moment and throw almond butter and bananas on top, but I’m not against just some good ol grass-fed butter too. Or Almond butter and berries.. or …
My fav way to prepare is with 2 eggs over easy and a side of just a lil bit of arugula/mixed greens drizzle with olive oil (s&p), sometimes I’ll make it a lil sammie!
Yogurt, fruit, granola bar - if your on the go or eating this at the office ( even if that office is at 35,000 ft ) , this is an easy filling gut healthy meal that will get you through those first few hours. To travel with I really do enjoy the coconut bliss yogurt, I enjoy a banana, and I religiously grab a paleo granola bar ( that I get from Costco). It does the trick and it’s light on my tummy.
Honorable Mentions: apples and cinnamon with a side of *crunchy* almond butter- or an ice cold banana with my hot coffee.
As most babes on a mish can attest you have to make the time for you! Set yourself up for success. Eating healthy first thing and more than likely you will follow suit the rest of the day..
