Vegan Summer Salads
Two salads- multiple variations. That’s what I like in my life- OPTIONS!!
Both can be made completely vegan and you can swap the beets out for ahi because its the exact recipe we use at home with fresh fish!
Hawaiian Beet POKE
Looks like the real thing doesn’t it???
I know- its a crime when you can’t get that just caught ahi (tuna)- and sometimes even when it says “fresh” at the market- it also says previously frozen. I’ve seen this rendition of poke pop up on various menus across the US, primarily at vegan restaurants. We tend to make our own ahi poke at home 95% of the time- so I thought I’d ughh, give it a beet.. lol honestly I crack myself up.. anyway-
Here’s a #dishonamish for anyone plant based or anyone who doesn’t have access to the super fresh fish.. Less is more with this dish remember that!
You can always *add more* salt or sesame oil..
what you’ll need:
2 large beets boiled, peeled, and cooled
1 white onion
1-2 green onions
sesame oil
Hawaiian rock salt- or any rock salt
DIRECTIONS:
After beets are cooked and cooled in the fridge for about 2 hours or longer- the colder the better, cut into cubes. Coarsely chop white onion, green onion. Combine in a bowl. Sprinkle with sesame oil, and rock salt- less is more.. too much of either can really kinda ruin this dish. Toss. Taste. add more salt or sesame oil to taste. Violá. I suggest serving in a chilled bowl.
Smashed Chickpea Salad
I saw this recipe all over instagram a few months ago and I had to try! I got it from notyourstandard.com - I honestly had to tweak it ever so slightly and used basically what I had in my kitchen. But I think that’s the beauty of this salad!!! Thank you Kayla Seah for the inspo!!
What you’ll need:
1 can of chickpeas (drained and rinsed)
1/2 celery stalks, diced
1/2 red onion, diced
Fresh Dill - more the better IMO
3 tbsp primal kitchen mayo
Juice of 1 lemon wedge
salt and pepper
sprouts
Your favorite bread/rice cake/ bed of lettuce of your choice
Directions:
Smash chickpeas in a large bowl. I used a waffle head potato smasher, it made this easier for me- the fork method def did not cut it! lol. Add all your ingredients, mix to combine. I added my salad it to a bed of mixed greens with shredded cabbage, and even tried it on a rice cake!
